A nice shaped blade for a traditional steak knife, but the blade is VERY hard. These rascals are very hard to bring back to sharp after they lose their edge. I find steak knives lose their edges pretty regularly, something about cutting against a ceramic or china plate all the time I suppose. I actually have gone to using a Magic Chef electric sharpener for most of my Kitchen Cutlery, and this is what I use on these, it would be a real time consumer to manually sharpen them, as I find I need to do a bunch at a time--kind of obvious I guess....The fit and finish is good, maybe a B- level. I like these knives, they are light, which doesn't really matter to me one way or another a lot, if anything I would probably have a slightly heavier blade in my dream steak knife. They make a nice finishing touch to a nice meal presentation though, and are pretty reasonably priced in the grand scheme...
